点评:I recommend this cooking school to anyone who wants to learn about the food and wine of Pulgia/Salento as well as anyone looking for an activity that will immerse them into the culture. I spent 4 wonderful days with Silvestro and 5 other participants whom I now consider family. We went to the local produce and seafood markets each morning, interacting with the vendors and learning to pick out the ingredients. We tasted the range of wines produced in the region and uncovered some under-valued gems I did not know about. We made fresh pasta every day including the famous orecchiette. The dishes (e.g., Orecchiette con le cime di rapa) were mostly plant or seafood focused. The class would be great for vegetarians and vegans. We also took a field trip to the beautiful town of Otranto touring an old church and learning some history of the area. As further testament to this school, this was the 4th time one of the participants had been there
