点评：One of the highlights of our stay in Appenzell was visiting the Appenzeller Schaukäserei, and it turned out to be both enjoyable and surprisingly educational. Admission was free with the Appenzeller Holiday Card, making it even better value.
The visit began with a tasting of five different Appenzeller cheeses, served in order of increasing flavour intensity: mildly spicy, strongly spicy, organic strongly spicy, extra spicy, and premium spicy. It was a great way to appreciate how the flavour develops with age. My personal favourites were the strongly spicy and extra spicy varieties, which had a rich, well-balanced taste without being overwhelming. The premium spicy was a little too intense for my palate, but it was still interesting to try.
The self-guided tour does an excellent job explaining the cheese-making process. If you’ve visited the Gruyère cheese factory before, you’ll notice many similarities in production, but Appenzeller has its own unique identity. The most memorable part was the interactive station where visitors can create their own blend of herbs, giving a fascinating insight into the famous herbal brine that makes Appenzeller cheese so distinctive.
The souvenir shop is well worth a visit too, offering an excellent range of cheeses, local products, and gifts at very reasonable prices. What really made the experience stand out, however, was the genuinely warm and friendly staff, who made us feel welcome from the moment we arrived.
Whether you’re a dedicated cheese enthusiast or simply looking for an enjoyable indoor activity in Appenzell, I would highly recommend adding the Appenzeller Schaukäserei to your itinerary.
