We were lucky enough to be hosted by the amazing owner Carmen. We had a fascinating slice of her personal history to understand her journey to Southwark! I had seen her on Saturday Morning Kitchen TV and was intrigued to know more about the gin distilling process.
We arrived on site which is an old railway arch which has been lovingly and sympathetically renovated. The huge stills are at one end behind a floor to ceiling glass partition. Our stills were set up on the bar top with implements to hand. Three large tables held all the botanicals.
Oh and there was a tasty table of charcuterie to soak up the drinks.
After some precise guidance from Carmen we were let loose on the ingredients, 20 plus large children let loose in a sweet shop!!!
Our host and her lovely assistant worked endlessly gliding around us, serving drinks, moving tables, bottling our spirits.
At the end we dipped our finished bottles in what looked like a fondue machine but with wax rather than cheese.
All recipes saved, all bottles sealed.
What a great afternoon in the company of some really nice fellow amateur distillers and of course our host, the true force of nature Carmen.
