点评:We (my spouse and I) were gifted a cooking class with Chef Duyen by our son…so credit goes to him in finding her. We had such a good experience with the class when she mentioned she also does market tours early in day we jumped at it.
She picked us up at 4am (yup 4am) and within a few minutes we were in the hustle and bustle of a very active and energized wholesale market. We didn’t see one tourist and were informatively guided about the history and importance of this daily event. Larger trucks arrive at 2am with meats, fish, vegetables, fruits, flowers, etc. and drop to local distributors. They butcher the protein in the streets, move large quantities of veggies and fruits to hotels, restaurants and other retailers into the city via scooter and rickshaw. Interesting to us was that amongst thr hundreds of people most are women working together to get things done….very impressive effort and although there is lots of noise, scooter and truck horns and shouting most seemed in good nature and happy. Remarkably, we saw carcasses of beef, pork and chicken laying on tarps with all the meat being moved efficiently.
Chef Duyen is well known and it was fun to see her interact and introduce us from Canada. As the sun rose we saw the streets littered but being cleaned up getting ready for the retail shops to open. She ensured to share her knowledge about local herbs, spices and staples of Vietnamese cuisine. Towards the end of the tour she took us to her fave food vendors and allowed us to try crab soup, bun Cha, bahn mi, a bread with honey and a local coffee shop….all were terrific. We said our goodbyes around 10am.
We would recommend to foodies and don’t let the early hour scare you away….it was one of favourite excursions in Vietnam and Chef is an excellent example of a wonderfully talented Vietnamese woman who is eager to create a memorable experience. Thanks Chef!
