点评:We attended the Convivio Rome multi-day cooking holiday in Sabina (just north of Rome). Very beautiful area. Small farms, olive groves, and lightly populated villages. We stayed near a village called Castelnuovo di Farfa. We selected this cooking holiday because of the attention to exclusively local ingredients in our cooking lessons, from the eggs used in the homemade pasta, the freshest chicken and charcuterie from the local butcher, sheep cheeses from the local dairy/creamery, and the super-local olive oil (from Guido and Sally's own olive trees), as well as the herbs hand-picked from their garden. On lesson days, we each had our own cutting boards and took turns learning the proper techniques of making our dishes, with no pressure, and we all got positive feedback - this is vacation after all! I came home with a new appreciation for cooking at home. There was also no rushed touring; with Sally and Guido driving, over 4 days, we visited a winery, an olive grove, a historical monastery with artisans who produce original crafts, a fantastic hill town perched high above a valley where we could see for miles, and learned about the olive harvest cycles and winemaking. Sally and Guido are the ultimate hosts and experts in the Sabine Hills and its extensive history. Making risotto, chicken cacciatore, and a polenta-based dessert while listening to Guido's Jazz CD collection made us feel as though we were cooking with friends in their home.
