点评:As part of our Morocco immersion tour, my friend and I enjoyed a wonderful cooking class at Khadija’s Kitchen. Before heading to their home, her husband — a retired government chef — guided us through the local market to choose the spices, vegetables, meat, and fruit for our meal.
With Khadija’s expert and encouraging instruction, we prepared stuffed bread with cheese and spinach, mixing the dough by hand before cooking it on the griddle. We followed that with a warm vegetable salad and then the star of the day: lamb tagine. Khadija was patient and thoughtful as she showed us how to slice the vegetables and season the dish just right. As someone who doesn’t usually enjoy cooking, I found the whole experience surprisingly fun.
A special highlight was meeting their young son when he came home for his midday school break. While the tagine simmered, we played musical instruments together before sitting down to a delicious meal. Khadija and her husband later sent us all the recipes via WhatsApp.
